Vegetarian Low Carb Meal Ideas

So, I am starting my induction tomorrow!  I will be eating 20 grams of net carbs per day for at least two weeks.  I have a 3 lb container of Strawberry Isopure Protein Powder.  I plan on consuming at least 1 scoop per day, which will give me 25 grams of protein and no carbs at all.  I will be making the shake with 8 oz. unsweetened almond milk, ice,  2 tbsp. chia seeds and 1 tbsp. psyllium husk.  I will most likely have that for breakfast.

I am also planning on eating 1 omelette per day. 3 eggs, goat cheese, arugula, scallion and cremini mushrooms cooked in a little bit of ghee.

Some other meal ideas: 10 grams net carbs or less per meal

  • Buffalo Tofu Salad with Blue Cheese Dressing
  • TVP Taco Salad on Romaine with Cilantro-Habanero – Scallion Dressing
  • Caulifower – Tofu -Cheese Bake
  • Spinach Feta Fritatta
  • Spicy Noddles: Shiratake Noodles, Cilantro, Tofu, Arugula, Spicy Sesame Ginger Sauce, Radishes
  • Big Salad: Romaine, Radish, Edamame, Cheese Crisps, Ceasar Dressing
  • Broccoli – Cheddar Soup
  • Smoked Tofu BLT Salad with Chili Garlic Mayo Dressing
  • Sesame Ginger Tofu and Broccoli Stir Fry
  • Big Mac (Griller, Homemade Flax Bun, Homemade , Sugar Free Special Sauce, Lettuce, onion, tomato)
  • Alfredo with Mushrooms over Shiratake Noodles
  • Asian Slaw (cabbage, daikon, ginger, garlic, scallion) with Tofu and Edamame
  • Crispy Flax Crackers and Cheese Dip
  • Chipotle – Walnut – Cauliflower Taco (lettuce wraps) with Guacamole
  • Raw Kale Salad

Staples I have already: kale, cabbage, eggs, blue cheese, goat cheese, spices, coffee, stevia, chia, psyllium
