I managed to only have 7 carbs for lunch and dinner today. I had Vanilla Chia Pudding for breakfast. Lunch was an omelette with mushrooms, spinach and cheddar.
I was craving something super spicy and full of veggies, so I plugged the ingredients into Fitday (down to the 5 spice) and made this delicious dish in 20 minutes. I sauteed scallions and ginger in a tiny bit of 5 spice powder and coconut oil, then added the tofu, collards, a bit of soy sauce and a splash of water , then covered it and cooked over high heat for 15 minutes. I finished it off with some chili – garlic sauce and some spicy sesame oil.
I didn’t even miss the brown rice I usually have.
