Vegetarian Low Carb Induction Day 4

strawberryicecreamBreakfast: Protein Packed Ice Cream (1/4 of 1 pint) 1 net carbs

Snack(not pictured): Collard with cheddar, 2 dill pickle rounds, spicy mustard: 3

Lunch: Romaine and Spinach, Tofu, Parmesan, Olive oil – Red Wine Vinegar Dressing Total Net Carbs = 7

Dinner not pictured: 1 collard leaf, 8 oz pepper jack cheese (yes, a whole block.. I waited way too long to eat and was STARVING..).. 4 pickle rounds, spicy mustard: 10 net carbs

I was 1 carb over, but I can chalk that up to waiting too long between lunch and dinner and being overly hungry.  From now on, I will carry some string cheese with me..  on the bright side, I didn’t “cheat” when we were at a friend’s house and I was starving and they were all eating Potato Leek Soup!
